These cookies are tender and tasty, but like classic sugar cookies, they maintain their shape while baking.

They are also excellent for decorating with sprinkles and frosting.

They are sweet on their own, but even better with frosting. I will also say that they are perfect for all events.

This recipe delivers whether you are making drop cookies or cut-out cookies, or whether you are making gluten-free sugar cookies for a birthday or Christmas.

These tender gluten-free sugar cookies are also prepped, in the oven, and out in around 30 minutes.

  • 1 ¾ cups (269g) of King Arthur Gluten-Free All-Purpose Flour
  • ½ cup (48g) of almond flour or finely ground almonds (blanched or unblanched)

Can I Make Them Vegan?

I actually don’t suggest a vegan substitute here, even though this recipe for gluten-free sugar cookies only has one egg.

Remember that cutout cookies can be tricky, so in order for them to keep their shape and not break, the egg is really the key.

But, that being said, using dairy-free instead of regular can make these dairy-free.

And I suggest you stay away from coconut oil, given that the flavor will be much more bland.

Do I Need To Add Xanthan Gum?

Gluten-free sugar cookies will definitely not retain their shape without xanthan gum.

Xanthan gum is used to copy the elasticity and texture of gluten.

Your gluten-free cookies would not retain their shape and would be extremely hard to roll out without xanthan gum.

Just add ½ teaspoon to the flour if your gluten-free flour mix does not contain xanthan gum.
